Commencement Brunch: Bacon and Gruyere Egg Bites

Ingredients
- 4 slices bacon, diced
- 6 eggs
- 2 cups spinach
- 1-1/3 cup greek yogurt
- 2 cups shredded gruyere and pepper jack cheese
- 1 tsp salt and black pepper
Instructions
- Spray nonstick muffin tray with nonstick cooking spray. In a blender, combine the eggs, yogurt, cheeses, salt, and pepper. Blend until completely smooth, 30 to 45 seconds. Pour into muffin tray.
- Divide the bacon evenly over the egg bites. Bake for 20 to 23 minutes on the middle rack, until the eggs are set.
